Chocolate Cake Recipe {with Oreo filling}

As I mentioned in Jeff's birthday post, here is the recipe for the cake that I made for him.


Cake Recipe

Ingredients:
1 package of devil's food cake mix {2-layer}
1 package {8oz} of Philadelphia cream cheese {softened}
1/2 cup sugar
2 cups thawed cool whip topping
12 Oreo cookies {coarsely chopped}

Directions:
Heat oven to 350 degrees

Prepare cake batter as directed on package EXCEPT add one more egg, use melted butter instead of oil and double the amount, and substitute milk for the water {found that idea here and it makes a huge difference!}. Pour batter into 2 9-inch round pans and bake for the recommended time on the package. Cool for 10 minutes, invert onto wire racks, and then finish cooling cakes completely {I popped them in the freezer!}.

Beat cream cheese and sugar in a large bowl with a mixer until blended. Gently stir in cool whip and crushed cookies.

Spread one cake layer with cream cheese mixture and then place remaining cake on top! {if you are pouring the ganache glaze on top, keep the cake on the wire rack so the glaze can drip neatly through.}

Ingredients:
8 ounces of semisweet or bittersweet chocolate {I used 60% cocao}
1 cup heavy whipping cream
1/8 teaspoon coarse salt

Directions:
1. Coarsely chop chocolate
2. Bring the cream just to a boil over medium-high heat. Pour over chocolate, and add the salt. Let stand for 10 minutes {do not stir! The ganache will cool too quickly if you do}
3. Stir with a whisk until smooth and shiny
4. Pour over top of cake
5. Gently remove cake from wire rack, place on serving platter, let cool & enjoy!
